Beer Can Chicken Recipe - Love That Spice
Ingredients
Whole chicken
Bottle of Sweet & Smoky Rub by Love That Spice
Olive oil
Can of your favorite beer
2 limes cut in half
Lets Cook!
Preheat grill and use hickory or mesquite wood chips to get a flavorful smoke going.
This recipe can also be recreated for the stove top, use boneless breasts or boneless chicken thighs cut into thin strips, drizzle with olive oil and sprinkle Sweet & Smoky Rub liberally all over the slices of chicken and pan sear over high heat for about 3 minutes per side. To make a cute appetizer thread the chicken slices on skewers for presentation and squeeze with lime. Serve with a vinegar based coleslaw.
Now for the grill....
Drink half of the can of beer, then poke holes in the can well above the liquid
Drizzle olive oil to cover the entire chicken
Liberally sprinkle the Sweet & Smoky Rub over every inch of the chicken and sprinkle about a teaspoon in the cavity of the chicken
Next stuff the sliced limes into the cavity of the chicken, tuck the arms and tie the legs with twine (no twine...no worries)
Finally sit the entire chicken on top of the beer can (c'mon you can do it!)
Place directly on the grill INDIRECT HEAT PLEASE! You can sit this on a pan if you want the droppings.
Once the chicken registers an internal temperature of 165 degrees F (45 minutes to an hour slow smoke) carefully remove the limes from inside of the cavity (wait until it cools a bit...no time for 2nd degree burns) and squeeze all of the limes all over the chicken
Slice and serve
