Fire Roasted Fresh Tomato Sauce - Love That Spice
Ingredients:
6 medium Roma tomatoes, halved
1/4 cup chopped onions
1/2 cup chopped carrots
2 tablespoons of tomato paste
2 garlic cloves peeled
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon lemon juice
1/2 teaspoon brown sugar
1/4 teaspoon sea salt
1 teaspoon olive oil
1/4 cup of finely chopped fresh basil
Roast tomatoes and garlic in a dry skillet over high heat turning constantly until blackened
Peel tomatoes and garlic and put all of the ingredients into a blender pulse a few times and then blend until smooth
Pour sauce into a sauce pan, add 1 teaspoon olive oil and simmer for 35 minutes to slowly thicken. Season to taste with salt and pepper.
Serve over pasta and sprinkle with fresh basil
